By default, fighting games are 1v1, that's it, and the stages tend to have the same diagram, I don't think you can get more competitive than that.
Racing games are built around racing other people, on multiple tracks that have different layouts.
Almost every racing game have the same control scheme, you play one racing game, you get the idea of how every racing game plays like, same goes for FPS games.
Every fighting games plays completely different, hell even a legendary franchise like Street Fighter were every entry plays different, on top of that you have 2D fighters and 3D ones.
Even then, within a fighting game you have up to 30 characters that don't share the same fighting styles, and different archetypes, for example in USF4 you have:
>Motion based (Ryu, ken, Akuma)
>Charge based (Guile, Balrog, Blanka)
>Rekka (Fei Long, Yang, Yun)
There is crazy technical stuff, match-ups is one of them.
