They're right if they're referring to accessibility things like colorblind support. There's no reason to complain about it being there, just don't use it.
That statement is NOT for raw gameplay mechanics like sprinting (Halo remake) or first person aiming (MGS remake) that completely break the games. Their presence in those remake are an inherent design flaw that cannot be "turned off" like people who misuse the statement seem to suggest.
