Kratos was a human in GoW1 only reaching godhood at the end
The first third of GoW1 and the very ending were set during a war fought by humans
GoW2 featured human cities and manmade setpieces like the colossus
You know stuff like that, individual humans other than Kratos hardly matter because they're weak but as a species they mattered and we felt their presence by the structures they have build and the wars they have fought.
Old GoW3 already shifted away from it with mostly godly/hellish/titan levels and nuGoW completely did away with it. The norse gods were not the gods of nordic people and they didn't live like gods because reasons
If you ask yourself what makes a god a god you'll find that nuGoW follows the MCU fomula of only needing a name and a power while old GoW gods had purpose in the world and their own motivations

Ragnarok storywise was a complete mess. They obviously wanted to make it a trilogy but that would've taken an additional 5 years, so they tried to cram 2 games worth of story into 1. It's why it simultaneously feels like it's crammed with too many plot threads and characters while also feeling rushed since none of them get time to breathe.
