I'm at the point where I keep starting games, get really into them for a day or two and then just never play them again. I don't know why this keeps happening.

I'm that way with pretty much everything, anime included.
I've rewatched the first 30 or so episodes of Hajime no Ippo a few times now and then always take a massive hiatus. Then when I want to watch it again, I feel I need to start from the beginning because I don't remember everything.

That's why I choose short and easy games.

Ain't nobody got time for a 600 hour JRPG with complex mechanics.
