They took high res textures and slapped them on lower poly models. It's shit. Not to mention that they straight up change the artstyle for some areas.

The only objective upgrades of this remaster is climbing was made faster, and gyro controls are an option. The rest of the changes were for the worse, especially graphically.

Okami is a technically more demanding game than TP or any other GameCube game. The speed at which it outputs post processing effects can only be done on PS2 (48GB/s graphics bandwidth, higher than the PS4) and the proof is the Wii port of Okami which basically runs on repackaged GameCube hardware chugs along even with all the extra effects removed. The only thing GameCube has over PS2 is shader support and that is the only thing, I mean it.

No but only because I've never played HD. If I did I probably would because I have completion autism with Zelda. Last time I played it I emulated the GCN version with a widescreen hack and 4K resolution and was amazed at how good it looks. It's one of the best looking gamecube games.

I just stopped exploring in the original because every little cave or grotto just had more money and I was capped on rupees for like 95% of the game

GC games look great but there are PS2 games that still flex nuts on modern slop.
The PS2's biggest graphical problem is interlacing. It gives games a slight blur even with PCSX2's deinterlacer.
So I guess when you look at it like that GCN games do look more crisp but the post processing effects the PS2 could do are crazy.
