Stamina is roughly the same, maybe you can have 50 lower, but you still want some extra stamina so you can enter Dueling on final straight. You want Guts around 600 at least for medium/long, higher for Sprint/Mile but I dont think it's achievable in Unity Cup.

My suggestion is to build 3 same umas, with Pow, Guts, or Witmaxxing and compare them.
JP already able to make room match for yourself so you can check your umas all at once, I hope we can get that early too.

All the new guts rework does is add 3 things: A marginal increase to your top speed in the final spurt. Its about 1/6th - 1/7th as impactful as speed is. A mechanic to fight for position between front runners in the early race. And a mechanic called 'dueling' where two umas that are neck and neck gain lots of acceleration and burn through stamina.
It doesnt change as much as people would have you believe, guts meta starts with the 3rd scenario when they add a scenario that greatly rewards taking guts cards and training guts.
