Low-poly models are not automatically bad. Most indie game devs opt for it because they know they are shit at more complex 3D modelling and hope that by making it low-poly they can deflect any criticism and obfuscate under a sense of artificial soul and nostalgia.
If you are bad at modelling high-poly models, you will also be bad at modelling low-poly models. You can't cover up a lack of talent and effort by reducing your scope.
Another thing that betrays a lack of talent and nostalgia-baiting by these indie devs is incredibly shitty pixelated textures on their models. They try to emulate the PS1 style, but go back and play any PS1 game and, sure, the textures aren't so great by modern standards, but they were absolutely capable of decent detail and shading. Devs back then were hindered by the tech, but they wouldn't submit to it and did every trick they could to make their game look good. It was lo-fi, but not simple pixel art slapped onto bad models. Indie devs don't understand this.
If you are making an indie game and are going for PS1 style graphics, you have no excuse for your game not looking at least as good as Metal Gear Solid.
