There was GT Advance series which pretty much copied Gran Turismo

There were 3 games on the GBA and one on the GameCube and Wii

Racing sims require car licenses. Nintendo does not do licenses, if it's not wholely owned by them it's not for them.
They used to have more serious arcade racing games like F-Zero and Wave Race, but eventually it all converged to Mario Kart, and Mario Kart devs hate racing more than anything. Where Smash and Splatoon add to the formula of their respective genres while still keeping a competent core of a fighting game and a shooter respectively, Mario Kart is hell bent on reductionism, every bit of actual racing is simplified, replaced, or/and explicitly discouraged. Extremely wide tracks, extremely primitive physics, deliberately placed safeguards against any and all skill expression, explicitly discouraged frontrunning, you will bag, you will only use party-approved shortcuts and you will play the intermission tracks.

Mario Kart is also the reason we'll never get a truly new F-Zero (99 doesn't count and you know it) and why every other racing series somewhat associated with Nintendo like Excite died off. Why bother wasting dev time and resources when Mario Kart makes more than all those other franchises combined?

That's not a license. That's an advertisement, paid for by Mercedes (that dragged on for too long, GLA changed two generations before World finally removed it lol). I really wonder why they didn't cut them in Deluxe though, all three are stat clones of other machines.
