The takedowns and counters are meant to be timing contextual sensitive and offer you a brief moment of invulnerability, whilst also being satisfying to pull off. Its a reward for hitting a good button timing just before an enemy hits you, or a reward for successfully knocking down a target as you jump them and put them out for good.
Outside of those things, as you're laying into enemies, you can still be hit stabbed shot or hit with a projectile from behind. Not to mention they usually incorporate environmental hazards later on in the game too you have to be aware of. They key difference between that and AC is, AC just GIVES you the invulnerability special kill animation. You just walk up to an enemy and press it. Or make use of a gargantuan counter-attack window. I get that the devs wanted to sell you this fantasy of "you are le ebin master assassin you are so good at killing you just stroll up and kill people" but they forgot to actually put in a robust combat system with it
You can just choose not to engage with the systems in bamham and just spam stun and jump around constantly but the combat not only looks worse, but is also less satisfying to play and offers less XP for doing so.
