there's no telling in the story that vegetables were actually the cause of the sex swap. luka could as well be female in a number of other worldlines.
and it literally doesn't matter. the "subplot" with luka is just like with any other "heroine" besides kurisu, a stepping stone for the protag to realize how the fate in the context of time travel is cruel in regards to his/other people feelings and that kurisu is the one he truly fully cares for.
the fuck would change if the vegetable method didn't work or they used some other, more "scientifically accurate" one to achieve the same goal?

the only thing i would say is that the intricacies of sciadv's world's mechanics are ot completely solvable within the respective entries in the series. you need the whole series context for that to make complete sense.

even if you did, you probably wouldn't understand what the true ending of s;g meant, so i'm still gonna say the following:
okabe didn't have to actually trick anyone, despite what he calls it from their perspective. the "rules" that he has to follow were there all along, it just took him the entirety of the story banging his head against those rules until he figures them out and basically reverts everything to the beginning.
what exactly makes it an asspull? it's not like the mechanic that you and the protag become aware of near the end didn't exist prior and there's something that contradicts it in favor of plot.
also, if you follow s;g up with s;g 0, you know that it's not even okabe who first comes up with the idea of "tricking the world"
