the game literally feels unfinished, but the unfinished stuff is dispersed throughout the game rather than concentrated after the half way point like ds1

Nah, DaS remains the best of the three.
Then it's just a fight for second place.
DaS2 is the best the series ever got as an action RPG, although no one wants to hear that. Janky as hell, and unforgivably ugly in places, though.
DaS3 took most of DaS2's mechanical improvements, but then the world design was the worst in the franchise (a straight line from start to finish). Good set pieces and memorable boss fights; style over substance, but still a Dark Souls game, so still quite a bit of substance.
King's Field IV > Sekiro > Dark Souls 2 > Demon's Souls(PS3) > King's Field 2 > Dark Souls 1 > Shadow Tower Abyss > King's Field 3 > Shadow Tower > Elden Ring: Nightreign > Elden Ring > Bloodborne > Dark Souls 3 > King's Field 1 > Eternal Ring
