Void Shadows is absolutely worth getting. Gets you a great new archetype too.
As for best currently: Priest Bladedancer
The other: Psyker soldier

Is there anything I should know about stats being useless or important? Like if I go all-in on fellowship or intelligence, is the game going to be imposisble?

There are a lot of combat encounters but that's why you have companions.

It's a very old school CRPG in a lot of ways, no matter what type of character you build, you will eventually come across a check on one of your dump stats and fail. That's part of the game.

fellowship or intelligence maxxing is a viable strat and some feats actually incentivize you leaning into this. If you go Noble Officer, for example, it synergises extremely well with fellowship.

Depends on your class. If the stats are not optimal for what that class does and you pick Soldier to Arch Militant but only up Int and Fellowship, then yeah, you are bricking your character for combat. But you can respect pretty much nothing. Although I'm pretty sure there are stopgaps for giving you options that actually fit your class.
Not that it really matters. Aside from maybe being bullied on a low level, all RT characters turn into snowballing machines that end fights in 3 turns.

Lots of content in the DLC and it’s inline with the main quest. So worth getting now. I think they also rebalanced the xp curve in 1.5 with the expectation that most players would be playing DLC content.

You will probably steamroll the game eventually so daring should be ok, seeing as you are somewhat familiar with other crpgs. You can always turn down the difficulty later anyway.

It can, and it makes for a fun build if you stack it through volatility. You can also stack safe feats though. Up to you.

Not when that content is a negative value. Eldar contribute nothing positive to the story and killing them on sight is the best way to handle them.
