For me it's the Bleak Faith: Forsaken build before they added i-frames to the game. The game was janky and unbalanced but it had a very neat mechanic where your character could only improve by finding better gear and craft better gems. I wish they polished that instead of adding a generic exp system.
Also the art direction was very different, the latest version has a grimderp and horror and that version and a more "ancient ruins touched by the sun" vibe that I loved.

this hasn't been a complaint about graphics for like 15 years, it peaked with crysis which ultimately was just an unoptimized piece of shit that was still capable of running on top of the line hardware for the time
these days it doesn't even matter if you have the newest GPU and 128gb of RAM, the game is still gonna run like ass without framegen and upscaling
consoles only seem better in comparison because you don't get graphical options, you just get 720p upscaled to 4k with 60(24) fps and more artifacts than a steam thread

Not sure if I'd go as far as GOAT, but Afterimage somehow kept me playing far longer than I had expected. Ended up going for 100%, which took a bit over 35 hours. It's odd and at times incomprehensible, but I really enjoyed exploring the world
