A lot of good roguelikes are open source. Nethack and Dungeon Crawl Stone Soup come to mind.

Then you have Mario 64, Zelda OoT, Majora's Mask, Sonic Unleashed, Mario Kart 64 and Goemon.
Also CDDA gets mentioned a lot here, you could check it out.
And while not open source MUGEN really stands out, it's abandoned and people know everything about the engine

are there any recent recomp projects (XenonRecomp/n64recomp etc) that would be worth getting involved in?
