Nethack lost its appeal to me for being the definition of a wiki game (or BBS game at the time), like you'll never know most of its mechanics if you don't look them up, you'll just die over and over to shit you could never know was a thing.

That being said it's hard to find something similar, CDDA comes to mind but I hate the realism autism direction it took.

Dwarf Fortress is comparable, but Rimworld is more fun even though not nearly as deep.

Just play other roguelikes
Mystery Dungeon games are more simple but Shiren 6 was really good
