Most people who enjoy the genre at least like Arland and Ayesha. After that opinions start to clash. Maybe you'll like them, maybe you won't. A lot of newcomers to the series only started playing because modern entries have gotten rid of the time limits and won't touch the older games. These newcomers enjoy some of the modern games while the longer fans of the series don't like how the removal of the time limits made the series more casual and less engaging. Whether you enjoy time limits or not, with about 30 entries in the series, there's bound to be at least a few you'll enjoy if you like cute girls blowing up cute things.
For me, a strong cast of characters matters just as much as the core gameplay of the entry, and I love just about all the Arland characters which makes Arland an easy favorite for me.

The time limits for all the games are really easy and might as well not exist when it comes to the story/endings.
Even Totori as the "hardest" modern Atelier is easy outside of the convoluted way trigger all events for the true ending.
However I fucking hate the time limits with a passion as soon as the post game comes up and they really dont have a place there.

You mean the story or the postgame? I never bother going all out on crafting until I can pick up the post-game specific traits found in the optional dungeons. The main stories are typically easy enough to where you can be really lazy with the crafting.

Ryza 3 is awful, it's got a nice looking world that's completely devoid of any meaningful content since the same enemies and ingredients are copy pasted everywhere and there are no bonus bosses at all, they didn't even bother copying over the bonus bosses from the previous games, so 3 doesn't even have an endgame.
