The races are one of the options, there are several. Anyway you're not supposed to take it too seriously, it's just a dumb minigame at the end of the real game to give you a reason for why you're collecting the powerups and fucking with the other player.
It's an extremely fun game to play with friends because of all the random bullshit that can happen. A similar kind of appeal to the old Mario Party games where you'll inevitably end up screaming at the screen and someone's gonna throw a controller, but that's the kind of thing you want with a friend.
