This is one of those games that's on the list of "shit I might play one day" but I never get around to. The Saturn version is vastly superior to the PS1 one, right?

No? It's not an easy game but I wouldn't say it's even in the discussion for most difficult rpg of all time. It's not even the most difficult japanese Rpg of all time basically every pc98 game was harder.
It's also more of a first person roguelike than an rpg. Have you even played it?

The saturn version is the "canon" version, the swith rerelease uses that as the base. The ps1 version has worse graphics and a lot of bad extra content.

I've only played it on hardware, I have no clue, but the game runs fine? It doesn't have unplayable slowdown, and the game is a slower sort of game anway.

Yeah, absolutely, you can have analogue camera control and then lean into strafes using the triggers, it makes that game feel a lot smoother.
