1. An artstyle as close as possible to the original games. any deviations, revisions or alterations? Fire the artist ASAP. Or just hire Charles Zembillas back to make it easier.
2. Levels need to be fun and not some drawn out nonsense with hidden boxes.
3. Rehire Josh Mancell to do the score.
4. No weird multiverse bullshit plot. Just have the mad scientists/tech guys of the previous games team up for a world conquering scheme.
5. Bring Tawna back and make her hot.
6. No stupid as fuck Dreamworks animation humor.

Take Crash 2, update it's graphics while retaining the same artstyle, and make new levels for it, and have a selectable playable Coco (no gameplay differences) with a bunch of cosmetic costume stuff in there
Oh and some Dark Souls mechanics in there, obviously

It doesn't really need fixing and has easily the best gameplay out of the jump and run Crash Bandicoot games. The only thing that could be improved is the visibility of some hidden crates. As they are, the chance that you would stumble upon them even while looking for them is low and that's not satisfying. Maybe include some more visual or even sound clues for the players can look out for. Modding out any hint of challenge is just dumb though and as another Anon said, why not just use cheats at that point?
