I've been on a bit of a kick the last 4 or so years.
In that time, I've beaten in order:

>Three Hopes - Azure Gleam
I've recently started Binding Blade, and am enjoying it well enough so far.
My favorite Lords have been Hector and Dimitri. Favorite unit is Pirate/Berserker.
Also I hate flying units and think they are faggy. Fuck Wyvern Lords and especially fuck Camilla, but for different reasons

I feel they are grossly imbalanced from Awakening and on, which makes me appreciate the titles where units can't branch into any and every class.

How would you balance them? I agree they are pretty insane in pretty much every game, but I think they are really fun.
I think to balance them I would make armorslayer weapons effective against them alongside bows and wyrm weapons. Since people like to call them "flying generals" with all those weapon weaknesses you'd have to position them better in the late game when enemies start spawning with gimmick weapons more often.

FE7 with the 3 protagonists is a good start, the tutorial segment at the beginning was made for toddlers though so it's pretty slow and intrusive.
Awakening if you want the game with the best visuals and music by far.

I completely agree. Branched promotion is ideal, as it gives you some semblance of choice but doesn't culminate in "every physical character has to go x class to get y skill, and have as many z classes as their final class as you can".
