I've come to realize something about Galahad: actually, he didn't have Lord Camelot in life, he must have acquired it after death as a Servant. In OCIV Mordred reacts with surprise at seeing the shield, and exclaims that "That's my Round Table! Was this that bastard Galahad's idea?!", implying that during life Galahad did not yet wield the core of the Round Table as his shield. If Mordred didn't know that Galahad had a Round Table shield, it can be assumed he didn't use it in life. The actual shield he used in life was probably the pale red cross shield that we see in Mashu's bond CE and is mentioned in Requiem, which is the mythologically accurate shield.
So why does Galahad's shield become the Round Table? It's probably because of the "Inheritance of the Seat of Calamity" mentioned way back in Fate/Unpublished materials. That was mentioned as the thing that allowed Galahad to manifest the Round Table as his shield, because he was given the right of the Seat of Calamity due to his seat being the Siege Perilous of the Round Table. This is probably something that happened after he became a spirit, right? Or, at least, it must be something that happened after Camelot. If you think about it, Galahad's probably one the few mythological powerful Servants who got even stronger after "death", rather than weaker. His greatest feat is gaining the Holy Grail and ascension, right as he "died". Lord Camelot, it's now fair to say, was probably also acquired after his life was over.

I think regular Skadi's kit is really good for Quick comps trying to permanently crit in longer fights IF you have her at high NP levels. After her NP Strengthening she gives 20-30% Attack up for FIVE turns per cast, plus 50-100% crit damage for 3 attacks, 5 turns, scaling off of NP level. That means one Servant's Quick crit damage gets TRIPLED, AFTER the 50% Quick performance boost. Her overall skill cooldown is lower, at 6/6/6 instead of Summer Skadi's 6/7/7.
If you're looking to spam a Quick NP for farming, Summer Skadi is definitely better. If you're looking for big crit damage on one attack, Summer Skadi is better. But if you're looking to use a lot of Quick cards and have them all crit all the time, regular Skadi is probably better, especially at high NP levels.

2) Meteo may have fucked the setting a bit but definitely not for the reasons you think. The issue isn't too many servants, the issue is the world is too linear. I mean 90% of the world was destroyed or something, aside from a few cities which are now slightly futuristic and everyone has a servant, and Fuyuki is still like a nuked crater, and they're constantly trying to get back to Fuyuki to learn the truth about Erice's mother or something. The story could have gone a few places but it ended up a bit too small oddly enough. You introduce an older Yukika and then kill her off, offscreen. She's probably still alive really but the entire thing feels like a writer who creates a huge concept but then ends up subconsciously limiting themselves.

Watcher in FSF was originally meant to be Shielder, then became a Gatekeeper, then turned to Watcher, which is a "custom class and not a proper Extra" like Mashu's Paladin. Shielder Galahad's ability to be independently anchored in reality (similar stability to Independent Manifestation) is something attributed to his being "the Gatekeeper of this world/CHALDEAS", further strengthening a connection between Shielder and Gatekeeper.
You can also point out a similar trait between the two "Gatekeepers" who can be Shielders, because Galahad's thing is that his shield allows for the summoning and manifestation of any Heroic Spirit, and Watcher's (Moby Dick's) ability also allows for the manifestation of Heroic Spirits (as shadows), meaning Gatekeepers aside from being independently anchored in reality also have something to do with gathering heroes or some other ability that interacts with other heroes (which also makes some sense when you consider Gilgamesh once was meant to be a Gatekeeper due to his also having abilities that interact with heroes).
