Higher rank gives you more slots on the person and more stats, and higher rarity also gives you more stats.

Yaoling is the only other fire DPS who could replace her.

Your MC level is entirely dependent on specific "wonder exp" most of which is tied to daily tasks, side missions, and parts of the main quest, and your other characters are level locked behind milestones that you hit by levelling your MC. You can get wonder exp by clearing out all of mementos but the amount is basically scraping the barrel compared to stamina activities
The enemies don't scale though, so if you miss something then go back later on you'll obliterate them.

Story is easy, regular side stuff is a little tougher but still easy, mementos bosses especially the optional ones are all sick with various unique buffs and mechanics that encourage team building and keeping all of your party up to snuff to have the range to counter whatever comes.
