I've never played RDR because I've just moved away from AAA games. From what I've seen of it it's stunning but I get the feeling I'd be paying for nothing more than a tech demo, because when I want gameplay, I want really in depth stuff, not questing. There's too many flight simulator nerds for this to work, and a plane is pretty much entirely controllable from one place. For a multicrew vehicle game to be fun I think the ship/vehicle needs systems that can only be interacted with from other locations than the cockpit.

Barotrauma is a good example, the captain can steer the ship but the power needed for the engine comes from the reactor and there's a minigame to keep that balanced so that you actually have enough power to run everything, and the hull is breached so you have to run to the lower deck and seal it up, and now there's contacts on Sonar so somebody needs to man the guns. Even with that game's massive jank it can still be a lot of fun due to the workload and cooperation needed to drive the submarine well

For a plane you're just sitting in a cockpit with two sets of identical controls and everything is right there in front of you, unless you have some weird steampunk type plane where you have to run to the middle of the fuselage and winch the landing gear and flaps down manually

Also having played DCS on highly populated non-serious servers with retards taking off from taxiways and from both ends of the runway at once, an ATC is absolutely not necessary, sometimes there are servers where people try to roleplay as ATC but it's literally just a larp.

So yeah coop friendslop vehicle crew game I think is a valid genre, and I am making such a game, but it needs to be a spaceship, tank, mech or something other than a plane.

Although I think that opinion would be rooted in the implication that less realistic graphics are "better" than realistic graphics in the sense that they provide a stronger platform for creativity, art style, and individual expression.
You can only paint a realistic tree so many different ways, but if you limit your fidelity for the tree you're painting, you'll be able to paint it in a manner that expresses how your brain fundamentally perceives trees.
I think this is why people strongly prefer low fidelity graphics, as it allows players to get a glimpse into how the developers and artists perceive the environment of the story they're telling. If the player has a natural affinity for a art style of the game, then they'll enjoy the game much more than they'd enjoy a realistic game of higher quality.
Realism = "That looks nice. I like it!".
Low fidelity = "That's a cool way of portraying [thing], I'd probably make something similar if I tried to make a game!".
