Pretty well for the most part - Ako, Himari and dps like Aru still find plenty of use, either because they're still the best or they're close enough it's servicable.

I was stuck in Wow hell during my college years and it severely impacted my adulthood

Some of them have been sidegrades or pure dickpulls.
Some things like the shupos that are coming in around 2 months are a purple damage dealer and buffer, which have traditionally struggled to compete because sHanako was so broken, but the buffer is the first of it's kind and the damage dealer has synergy with the buffer, getting a cost reduction.
Other than that there's been some general shifts like new bosses that value cover, which has done a fair bit to elevate a dead launch mechanic into being relevant for both new and old units that create it.
The same boss also values damage over time effects, so we've had some students doing that.
Kisaki buffs EX damage, Rio duplicates EX skills and we had a bunch of students that are specials dealing EX damage with a student that buffs EX damage to try and break up the "strikers do damage, bring specials to buff" meta. They've managed to invent some novel stuff, though we still do get basic bitch student kits that are sidegrades to existing ones. If a student WAS good most of them still see use though, Maki, Wakamo, Ako, Himari etc - still meta.

The amount of investment you can do currently isn't going to cost you enough to seriously slow you down in the future, so I'd just go ahead. In particular leveling units up is very safe at early levels. The experience required to level units is exponential, and the amount required to level characters to the low levels available to you now is pretty inconsequential in the long run. Maybe hold off on using skill upgrade mats and equipment (the tier 1 equipment is fine, you'll quickly have way more of it than you can use) unless you feel like you really need it. The levels will do a lot to give them enough power for the early game missions.

Also, many 1-2 star units are actually quite good and worth investing in. In Blue Archive, unlike most gachas, 1-2 star units are not inherently inferior to 3-stars. Their rarity only influences their starting star rank, but that rank can be increased up to 5 stars, and a 5 star that starts at 1 star has roughly equal raw stat power to one that starts at 3 stars. What matters is the design of their kit.

Looking at the list of 1- and 2-star gacha students, I would say that the ones who are most worth investing in (including skills and equipment) are probably Akane, Chise, Akari, Kayoko, Mutsuki, Tsubaki, Yuuka, Hanae, Utaha, Kotama, Serina, Momoi, Hanako, and Momiji (though with Momiji specifically you probably won't use her that much if you get S.Hanako next week, which you really should; this also applies somewhat to Chise). Most of these students have a valuable niche at max level or are just generally good.

There isn't really anything you need to do with it in the sense of "if you aren't doing this every day you're missing out" or anything like that. You can use the fusion chamber to craft things like secret tech notes or selector boxes for furniture, Blu-rays, tech notes, or gifts, but those are things you'd do when you need to do them, rather than something you're doing proactively all the time.

Basically, if you run out of tech notes/Blu-rays for a particular school and have lots of others you don't need, you can convert them. Same with artifacts if you run out of a particular kind and need more right now.

For secret tech notes, you'll get secret tech note sheets occasionally from events and such (like the current Balancing the Books event gives them out), and they have no purpose except to be fused into secret tech notes (15 sheets to 1 book) in the fusion chamber, so you can just do that whenever you get enough of them.

Level 69, I have some questions.

What's the best option for the Eleph choice boxes? The ones I already use are Tsubaki, Hanako and Akane, mostly Tsubaki. But not sure if it's better to use those for Hard Quest or Raid characters.

Miyako and PvP coins. I got her pulling for NY.Kayoko, seems good for the current PvP season but not sure if I should spend the coins on her Elephs.

Should or not claim characters. It's good because you can use the character early and get extra 50 elehps + eligma the first time you pull them. The bad thing, you are 70 elephs behind, that's like one/two months of daily Hard Quest, not sure for Raid characters. I suppose waiting for good characters like Iori is fine (at least until fes), and maybe claiming others like Tsurugi and getting the extra eligma. I can claim Iori, Eimi, Tsurugi, Mimori and Natsu.

Similar to the third question, should I use the shop tokens to unlock all characters first and then farm the best ones, or keep farming those? Same for Hard Quests.

Some alts are better than the base version, it depends. Meta is not that important in this game, I take my wife to pvp every day and still get plat.
The only case where newer girls were needed to complete were content were specific raids that used specific mechanics, it's not a big deal and if I don't have the girls I just skip it.
Once you get to the end this game takes like 20 minutes to do dailies, it's only grindy early on when you have to manually clear stages.

1. It's certainly not the worst, but not the most generous either, you need 200 rolls to spark, that's 24k pyro - generally speaking don't roll unless you're prepared to spark because you'll set yourself up for disappointment. But you can reroll until you get a good starting roll with 2-3 good students to get you going.
2. Students all have different kits and bosses have different gimmicks, alts will have different kits to the base student. So some students will be really good on a lot of bosses and some won't be useful on any. The starting rarity of a student doesn't matter because they can all be raised to the same limit. Basically you need to use the right team of students to do well on a boss. Some are just really meta and others aren't. If you like somebody who isn't meta then investing in her is kind of a waste of resources but plenty of people do it anyway, it's up to you.
3. There is some degree of power creep but there's plenty of new students who are useless. They tend to release a raid specifically designed for a recently released student to excel at but can't do this for every student. You can find tier lists of which ones are good. In the next few weeks the good meta students being released on global are Seia and Rio. Balance is all over the place but JP is several months ahead so we can look at them to figure out which students to roll for in the future because they beta test everything for us.

Simple strategy is objectively harder if you are struggling to clear the boss battle.
With the normal one, you can save up cost on the battle right before boss, so you start the boss with max.
