You have to keep in mind that there are wotlk jc guides for later expansions. Make sure you look for a jc 1-450 guide because in later expansion the requirements leveling wotlk jc have been made easier

I have always done skinning + mining until I'm level 70, then switch skinning for engineering (because the flying machine is cool).
Skinning gives you crit and certain skinning brackets can make you a lot of gold.
Keep a lot of the excess ore you mine for prospecting later to get most of the gems you'll need, 99% chance you will still need to use AH though.
Once you are level 80 and you have theoretically collected all of your mats with a decent buffer you can drop mining for JC.

The lore in vanilla WoW is Thrall discovers Neeru is summoning demons in the middle of the Horde capital to overthrow him and Thrall just lets him live even though they could make a quest where you assassinate Neeru and have him respawn so other players can do the quest like every other quest where you kill NPCs.
There's no lore reason to explain why Neeru lives other than he just does. The lore sucks. The game should have been more consistent on Horde being anti-demon. But they weren't. So having a demon race join the Horde doesn't go against the lore.

Well yes the Horde (or more specifically the Orcs) took their entire "noble savages" schtick from the old Warhammer Khorne lore.
