It's hard to tell what the traps are now that I'm so used to it but to answer your question: no, not really. Food is really not very profitable as a bargaining chip. If you're struggling early on with keeping food production up there are ways to remedy it without spending build slots on food. You have assignments, for example, which every Champion general (green ones) come with a base assignment that gives flat +4 food. You also have administrators with the food production skill from their tree (available to both Chamions (green) and Strategists (blue)).

If you are massively struggling with food production then you're probably just not at the stage where you should build up your settlements that much. Keep in mind that settlement level past 4 doesn't provide much value for a good while. Most commanderie build templates have a functional version at settlement level 4, and they don't become too much better until level7 which you should only pursue a bit later on when you have a bunch more resources.

You're real goal should be to generate enough gold to afford your armies, If you're spending gold and build slots on getting food for your settlements you're slightly misguided.

I don't really know enough about Star Trek to really know if it would translate well into a Total War game.
Personally I think a Total War: The Elder Scrolls would be so fucking sick. First game could be northern Tamriel with Skyrim, Cyrodiil, Morrowind, High Rock and Hammerfell , second game could be southern Tamriel with the Aldmeri Dominion, Elysweyr, Valenwood and Black Marsh, and third game could be set in Akavir with all the crazy races over there (snake people, tiger people, monkey people and demons, I think) and with DLCs adding Orcs, Daedric forces and Vampires maybe.
I feel like a setting like the Elder Scrools would make way more sense in for a Total War game.

Lizardmen trying to use spawning pools in the chaos wastes will find that more of them come out malformed, and have more difficulty building temples because they have to fight off more weird chaos abominations, so everything gets harder

Delves get all their different AP archers by tier 3 and can boost growth with dictats so you'll have them pretty quick.

Khalida. Your starting capital is a minor settlement. You only have one army to begin with and have to wait for a few turns for your research to even recruit a 2nd army. Your standard recuits are spears, your missile units are limited and you start at war with a vampire faction that is in control of a major settlement that you want, they can have more than 1 army, the area is shaped so you are on one side of a small donut so if you go one side 1 of their armies might sneak from the other side, them being vampires means unless you fight them inside a settlement they might instantly come back after battle. WH3 is the "base game", with the giant Immortal Empires game map, with its base game races.
WH2 and WH1 are the "old base games", which when purchased, let you play as their respective old base game races.
There are separate DLCs all three games which add new races and factions. All of these can be viewed from the WH3 steam store page.

If you don't want to pay $$$ for DLCs, you can use CreamAPI to acquire them for a 100% discount.

You can't make Bloated Corpses better, and Cylostra has an early WH2 tier skill tree, so they only get cheap. All the defeat traits give your stuff stats like MA, MD, iirc leadership, neither of these will help them. I feel like the tools to make Aranessa the most interesting Coast faction is there. Give her access to all the pirate themed units, including slayer pirates. Reskin gunnery mobs into living handgunners with adjusted stats. Have living reskins Prometheans and Leviathans that only Aranessa's faction can recruit. The difference being without the undead tag they can now route instead of melting. But also keep the option to turn units undead, you can wave it off by keeping Vampire captains around who can use their powers to turn them in an irreversible process (bit like the Chaos Warband upgrade). Give her a special Promethean mount with updated stats and animations that doesn't make it suck shit. Rework her campaign so that there's more incentive to go and plunder various ports and land cities (like throwing in special items in certain regions) and such.

Ordertide is definitely the easiest overall, but there is some outliers within it.
If by doomtide you mean chaos, then its only hard if its one of the chaos starts in the middle of the map, like N'Kari, the ones that start in the polar sides of the map are piss easy, but they dont count with strong allies like ordertide do.
Destructoid is definitely the more complex ones to play campaign wise since they lack the allies of ordertide, and the protection of starting in the north or south pole, but their armies tend to be very solid to carry them
