Well that's the question really
To be clear, rank points scale exponentially for the value of your stats, so an all rounder horse with consistently wins races would get a lower rank than a horse that just pumps two stats to max who wouldn't be able to finish a race properly, usually these are the speed and wit maxxers. You can make very high ranked horses that would lose any serious race while better performing horses are almost always going to be lower ranked

Just focus on blue sparks for now so you can at least get some 6*s, horses inherit the blue sparks of the legacy options and their parents as raw stats, when you finish a run you'll get a blue spark by first randomly rolling the stat, and then checking the value
The only two breakpoints are at 600 and then 1100, so optimal spark farming is just trying to end with 600 in as many stats as possible
