You seem to be confused. Not having a reversal doesn't mean you can't chimp out on defense and be rewarded for it. Slayer in particular has a unique mechanic with his backdash that allows him to attack when he does it which is pretty bullshit and beats some stuff some characters have that otherwise is unbeatable. Slayer also has a few really good mashing butt0ons with tons of range on them that lead to him doing whatever he wants after. Basically, as long as you're not back-to-corner, you can make them guess what you'll do on defense and sometimes the best thing to do is block

It's pretty gay but she can only do it after one of these moves, and only the first one has a low followup. To actually be good at the matchup it's important to learn all her strings because whether she starts on 2P or 2K matters a lot for fuzzy blocking but at the start just look for these to be ready for the overhead and if they're being too predictable you can mash to interrupt it or blitz or jump out etc. When she's got swords on you it gets a lot more complicated but it's pretty easy to shut down low level Rams that rely on mashing out random strings into the overhead with a little practice.

I just watched the first 4 episodes of Dual Rulers. I don't get what people find so bad about the animation, its decent enough and for sure leagues above the animation in Strive's story mode where you'd have characters sliding across the ground doing their in-game walk/run cycles.

I-No is stunned, this is due to her being hit/counterhit repeatedly in a short amount of time. Basically a punishment for shit defense so you can't just mash until it eventually works.
Leo is performing a Blitz Attack (costs 25 meter and has different levels of charge based on how long you hold it down for), normally this can reject (cause the attacker to go into a state where they can't do anything besides blitz) moves and itself be rejected by an opponent's blitz shield. However I-No is stunned so she can't do anything. Blitz Attack will steal some of I-No's burst which means she won't be able to burst out of the start of Leo's next combo. Which he will be able to start because max charge Blitz Attack causes the opponent to go into a crumple state.
Basically I-No fucked up handling Leo's offense and the Leo is capitalizing on it as much as possible.
