Where I've lived there's a pretty big difference between "fine dining" and normal food. Rich people will still go to like, mid range restaurants but there's a fashion adjacent obsession with eating vogue and obscure foods.
I can't imagine anything like a tasting menu at a family restaurant, for example, but you could absolutely run something like it at a much lower cost if poorer people were willing to pay for the experience. The demand for it literally does not exist.
Or stuff like an oyster bar. When they're present they go, but I think most people wouldn't care for them outside of the context of "rich people food"

And yes there's something to be said about the fine dining experience, but I was mostly remarking on observations about truly wealthy people who will much down on $10 worth of cheap bar food in today's times mostly because "it's good" and not because of any psyops or greater societal reasons.
When rich people started eating lobster, it was probably just because they found out it was tasty and were willing to look past any social class issues around eating good food.
Also most people rich, poor, or even working in the food industry directly don't really know that much about food at the end of the day. It's a broad subject with lots to specialize in.

And steak is basically the same thing. By the time you're eating it, what you're actually tasting is a fuck ton of fat and salt and whatever seasoning/sauce it's served with.
But people gas that shit up like it's god's gift to food because it's expensive. One thing I've noticed is as you move towards rich people food the focus moves towards ingredients and story as much as technique and flavour. "Here's a slab of beef that cost $100, and we're going to do as little as possible to it to not mask the main ingredient".
Of course the chefs at the highest level are extremely talented, and I'm sure I could somehow fuck up a $100 steak, but I don't think even the best chef in the world is going to make that taste as good as a perfect ratatouille.

I have a lot of general ideas down. Even figured out most of the main cast and individiual chapters. There are still a few things I need to really look over and discuss with others.
