Probably herb/alch, its always a safe bet. Great money maker and very good to be self sufficient in consumables.
Extra flask value adds up so much over time, and it'll be nice if the alchemist stone is a legit trinket so I'm less reliant on getting/winning a drop for at least one slot.

I'm curious how good skinning will be initially though. If the vendor trash skinning items are actually good and fairly common it might be very lucrative to go skinning over alch while leveling to help pay for skills/mount and then grabbing alch closer to or at 60.
