Best way I can describe the fun of rhythm games is that it rewards your sense of time and your strength of memory. It's great for adhd brain types who like doing fast math subconsciously and it is sort of like mapping out a midi pathway through route memorization.

Two; As far as I know, the concept of boss monsters has not been elaborated on in any meaningful way in Deltarune. Ralsei uses the Dreemurr fire and looks like a boss monster. Would you say that makes him one? I assume not, since Darkners and Dark World rules complicate things, and no specific conclusion is implied by his similarities. I don't think we can simply say that because Undertale's boss monsters are in Deltarune they share their Undertale functions as well.
That doesn't mean you're wrong, just that what your preferred viewpoint is most likely headcanon, at the moment.
The function of redefining boss monsters? I dunno. I bet it will depend on what the Light World or Asgore's chapter 5 appearance have in store for us. Asriel being defeated and the breaking of the Barrier is parallel to the destruction and rebirth found in Gnostic storytelling. The Genocide Run serves as an anti-Gnostic throughline where as a rogue Angel (Archon), you wipe out the Underground and rob everyone of a happy ending. I can't believe nobody's mentioned how this might be a deep-cut to the miniseries Roots, as it was a big influence on JJBA which Toby has referenced in both Undertale and Deltarune. For those who don't know, Roots is an acclaimed miniseries about the lineage of Kunta Kente after he is enslaved and brought to America. Kunta's character has a lot in common with Kris, namely desiring freedom even while being stripped of his agency.

I think that the reason Kris doesn't want to look at photos of humans is because Kris wasn't adopted in a normal way. It's an inverse of Roots. Kris was taken from a community of abusive humans who enslaved him as a very young child, only for Kris to be saved by a Monster who then brought him to be adopted by the Dreemurrs.

Then, I make them really quirky and stupid, make them reference SBAHJ, and make their speech quirk be that they speak in really shitty MP3 quality. They also very sparingly show up in cutscenes during and after Cyber Field, mostly working for Berdly.
Finally, I modify the story progression to include them building up a massive shitty speaker to defeat Queen, which leads to the Three Battle Act tutorial battle. Instead of ending the instant you press 3 buttons, you have to alternate between making each one dance to defeat the giant shitty speaker they built.

Assuming I cant just rewrite chapter 2, bare minimum I give their sound shop in castle town a full OST instead of the random assortment they actually have and keep it open throughout the whole game instead of immediately closing next chapter. Sans in the Deltarune timeline is the Sans from the genocide timeline who got the machine working and hangs out with toriel and is an asshole to you in revenge. Sans hurts Kris through his revenge aimed at you, which causes Kris to become Chara in some way, wither through a reforming of the entire universe into Undertale or something else. The reason Deltarune is a “doomed” timeline is because Chara gets called when you need something to die, so he’s called over and over and over to destroy the world whenever it ends. Gaster is basically configuring everything and using it as a test environment, cheering you on to succeed because it was doomed to fail and he wants to see you prove it wrong.

If you've read The Neverending Story (a massive influence on Homestuck and even referenced in Undertale and recently Deltarune), then it fits. Dess was the original protagonist of the prophecy but lost her Hopes and Dreams, with her Despair taking on the form of The Knight as a harbinger of the Nothing/Darkness. If you just play Undertale, Sans is merely the victim of a timeloop where he doesn't have memories of previous loops, only that the timeline will be reset. There should also be a mini-subplot where the trio start infighting over dumb reasons but it gets resolved accidentally by Rouxls or something .
