Sounds like you hit 70 and then prestige to revert back to level 1, but you keep your professions/riding training (you have to train them at the required levels still but it's free after the first purchase). So you can just keep releveling your toons if you like that process.
They have trials/challenges too, so you can do hardcore, or hardcore + high-risk (if you die you drop items/gear/gold and pvp is forcibly turned on, but you can only fight with people + or - 5 levels of you). I even saw a trial wherein your toon is hardcore + they only regain health/mana while resting at inns, or hardcore + you have a fatigue bar outside of rested areas, or hardcore + you're a fishy guy and have to return to water (basically reverse breathing bar).
there's also an adventure mode which makes every mob elite. and a hardcore version of that too.

WoD is when challenge mods got good, and there was zero grind outside of cosmetics, and if you was tryhard you could do split flex raids.

FFXiV used wod style gameplay for most of it's expansions, and it worked great. I guess firing pardo and metzen before wod was even released sealed it's fate
