ironeye is an instant mark pop no matter what, and if you dont hold his ult down it recharges extremely quickly which can chain a lot of damage.
take that into account plus the nigh unkillable-ility of guardian and the instant 3 bar revives both rev and guardian have, (and the extremely easy 1-2 bar revives ironeye has) i think it's a really solid comp
though duchess may actually be the better call because she just shits out way more damage way easier than guardian that needs to get lucky with random attributes + damage types

Adel and the bugs are the same (both normal and ED version). Caligo is doable for both version if you don't count the near guaranteed frostbite as a hit. Normal Libra is maybe doable noroll from what I remember and dog may be doable but it would be a very boring fight, and as for the rest I don't know, but I do know that all of the water attacks regular Maris does can be normal sprinted to the side except for the AoE which has to be surge sprinted or you need to use Wylder's hook and for ED Maris the glassing attack can be surge sprinted if you have a good position, but it's way better to use the hook and jump and also you can avoid her charge attack if you stay under her

You just need to know the scalings for each class of weapon, which are usually pretty intuitive. Daggers good with dex, staves with int, seals with faith etc. Almost all weapons within the class have the exact same scaling and moveset with the exception of certain legendary/epics. You don't need to read what the item does, just glance at the rarity, class, damage type, status and passive and you'll know whether you want it or not.

most of the DLC bosses weren't anywhere near as bad as people were making them out to be. killed PCR on two different characters (125 +25, 80 +16) pre-nerf within a couple dozen tries each time. i really struggled figuring out metyr's hitboxes though, and got a lot of framedrops on divine beast that made the fight a lot harder than it should have been.

You can surge sprint the sword flame AoEs (run at them and to the side) and the blink speed rushes (just run away in a steaight line). You can sidestep the simple headbutts for free damage windows. It's good to do the normal sprint for the sidesteps.
In general it's always good to get as close as possible when it's in the 3head form.
If you get aggro by the three dogs then just avoid attacks and let your team do the damage and vice versa be on the aggressive if they aggro on your teammate.
