I bet it's the release model. The only reason I didn't actually play Undertale back in the day was because I spoiled it for myself with letsplays, but I ignored Deltarune because of the episodic format, which is something I hate in games. It took me watching a review from a couple years ago to give the game a chance. On the positive side, browsing and trying to make fanworks to fill the void has been actually nice.

My one hope for Deltarune is that Toby can write a good dark side story that doesn't just end with "I'm a bad person lets kill everyone" like Undertale. We've seen his hero saves the world story already so I'm more invested in what he does with the weird route, I want to see a compelling villain's story be it either something like the soul having already gone through the "good" route and deciding that whatever the cost for victory was was not worth it to them so they are putting the needs of the few above the many, or at the very least something with more depth than we got with the genocide route

Why demoralizing? It's obvious by any metric that Undertale would be way more popular especially for now; it's a nice, short, relatively simple game anyone can finish but with enough twists and replayability and little to big secrets to find and hear about and look up that it was the perfect storm of mega-popularity for a game, especially with how big streaming was getting at the time. Deltarune, meanwhile, is this piecemeal, much much much longer, more mature, darker even on the normal route, arguably darker as well on the alternate route, crazy whirlwind of weird that's only HALF-DONE after a decade of work. They actually could get away with some stuff in golden-age Disney, and Deltarune's cruelty is exactly the kind of bloodless carnage they'd allow back in the day. A lot of the themes would be fine as well, I mean, Brave Little Toaster could have been a Disney film, and that's basically Tenna's story in more graphic detail.
