Nasu is saying that of course humans would do that, which is proof deinos are far better, because deinos enjoy peaceful scenery. Nasu has no concept that even the war general or john Cena would also take the woman out somewhere nice like a fancy restaurant

Of course not. That's because Nasu isn't even human. Look at the sort of characters and concepts it writes. Look at the logic and thought process of the people that populate the TM verse like the mages. None of them behave or think like a normal human would. TM magus main motivation is to reach the root and to do that they pass on their research to their descendants using magic crests. Magus basically treat themselves as nothing more than hard drives and parts of some kind of a supercomputer just processing data to try and solve a problem (reach the root).

Artoria's whole deal is being too perfect she's inhuman. Even the antagonists have warped logic and thought process, like Araya Souren, whose idea of attaining his goals is just to keep looping life and death in an apartment like some kind of data processing machine just doing the same thing over, over again to collect stats. Kotomine Kirei's whole deal is the inability to comprehend basic joys experienced by normal humans. Look at Nasu's need to keep writing about automatons trying to be human or humans acting like automatons. Shirou is a human lacking in normal human sense of self-preservation, his Trace On scene is even structured as if he was writing a code or executing a program. Einzberns are nothing more than a bunch of homunculus programmed to continue their task even after the original human magus were gone. Nasu also loves writing about villains that have some grand, good intentions. But said good intentions are botched due to the execution or interpretations being warped. This is very similar to the typical sci-fi dystopian stories about humans getting wrecked by the robots they built because the robots or AI just execute the orders without understanding the contexts or reasoning.

Nasu is an actual alien or an abandoned rogue AI. Or is a literal mushroom eggplant that gained sentience when Takeuchi jacked off to them in a pot.

Emiya actually isn't weak. He's actually one of the best possible servants you can summon in a Grail War.
His mindset makes him pragmatic and willingly to do shady shit like snipe masters.
His projection skills let him fight in melee with top tier servants like Cu and Kojiro. Projection also lets him steal and use other servant's NPs.
His Broken Phantasms can overwhelm even a top tier servant like Artoria Pendragon.
With Unlimited Blade Works, he could kill most servants the same way Gilgamesh does with Gate of Babylon spam.
Mind Eye basically gives him battle precognition.
Heaven's Feel and CCC both confirm that he can project divine artifacts like Excalibur.
Even with a broken arm and no backup, he's still strong enough to kill HERCULES with godhand six different times.

If you have the mana to support Emiya, then he's easily top tier. He may not be god tier like Solomon or Serious Gil, but 9 times of 10, he could easily win a normal grail war

No healing skills so one hit is enough to cripple him in most wars instantly even with a top tier master as we see in fate route

No? If Medea is a top five caster in the setting, then she is by definition one of the top tier mages in the setting. You have to keep in mind that the following people are "mages"
1. Aoko. Her mastery of the Fifth Magic lets her draw upon infinite magic from the past and future, throw the concept of death into the future to avoid it, stagger her fate and prescence between the past, present, and future to make herself invincible to attacks, and create literal time loops to resurrect herself if she dies

4. Solomon. He could perfectly see into the future and past at will, enter and exit a pocket dimension at will, and shoot beams strong enough to wipe people from existance
5. Kiara. Contrary to popular belief, not all of her power comes from her Beastlike nature. She's also a master of the Third Magic, which she used to create her NP, which is so potent that she can use it to literally destroy the Earth

Medea is in the same tier as these monsters btw. If she's a top five mage, then she's canonnocially better than one of the people I just listed.

You can disengae from Cu before he gets in range for a melee Gae Bolg. We saw Emiya do this multiple times in his fight with Cu at the Church. Don't get me wrong, Cu can still kill Emiya by spamming ranged Gae Bolgs, but my point still stands that Emiya has a bunch of tricks to counter bullshit techniques.
Emiya not being able to beat Cu doesn't mean he's weak either. Cu is canonically one of the fastest servants in the series, on top of the fact that he also has powerful rune magic, and a bullshit conceptual ability that lets him onehit kill anyone without high luck or knowledge of his melee gimmick.

Shirou was born in modern day japan. A normal human would never be able to train until they were on par with servants, and it would be impossible for them to become a heroic spirit through merit alone; they would need a contract with Gaia like Emiya did.
Shirou explicitly cannot keep up with Archer and Lancer's movements. He specifically says their movements are inhuman. Yet later, he's fighting the same monsters that make Lancer and Archer sweat.
In Spark Liners High, he fights Saber Alter and is even able to greviously injure her. This is because Shirou's projections gave him Archer's skill and Archer's technique (Triple Crane Wing)
In Heaven's Feel, Shirou goes from normal human movements to faster than the speed of sound after projecting Hercule's sword. Shirou was NOT faster than sound prior to the projection. In fact he was literally running and hiding from Hercules because there was literally nothing he could do to even harm Hercules prior to his projection.
In Unlimited Blade Works, in his fight with Kuzuki, Shirou cannot keep up in melee combat at all, until he project's Archer's blades, and can suddenly not only keep up, but drive Kuzuki back
In the Fate route, we see that Gilgamesh CAN fight Saber in melee combat, and even overwhelm her by rapidly changing what weapon he wants to use in melee combat. Later in Unlimited Blade Works, Shirou closes the gap, fights Gilgamesh in melee combat, and applies so much pressure against Gilgamesh, that even Gilgamesh admits defeat.

The game does cite Medea as one of the top magecraft casters in history or something like that. She's a genius, she can turn Demon Pillars into pancakes, etc. So I doubt she's as shit as you say she is. But I think it's also that she is very skilled but she isn't POWERFUL which isn't the same thing. The other Anon conflates True Magic, Magecraft, and power levels so he's all over the place but I think it's safe to say Medea being one of the best isn't too far off. Also it might just be that she is one of the best HUMAN Casters which is a big caveat. I don't know where the original quote about "top 5" comes from so I can't say for certain what Nasu said/meant.

You bringing up Hecate is a good point. No mage would be able to out-do any god or goddess, e.g. Hecate, and there are definitely more than 5 gods so there has to be some sort of qualifying caveat with the top 5 comment, assuming it's still true to this day and not retconned.

It's explicitly stated that when Shirou traces a Noble Phantasm, he traces not just their physical make-up but also their history and legend, which is why he can project even a fraction of their power as a Noble Phantasm.
