The DLC is absolute dogshit, but in a car crash sort of way. The solo events are better than SB by far, but Wuk Lamat is a significant amount of who you interact with, which is worse than any previous DLC. I never hated Lyse, but it took until halfway through DT for me to start despising Wuk beyond just "she has awful voice acting and is an attention whore." 7.3 was pretty good, and the new DD is really good. If you think you can grin and bear through 7.0 and 7.1, I'd check it out. Just pay $12 instead of $15+ as a trial run.

XIV is also, as you somewhat surmised, the greatest source of problems emanating from the continued life of MMOs. People do not gravitate towards XIV - they settle upon it because the paradigm it laid down does not facilitate innovation. It's VRchat in disguise and has abandoned any notion of the old content formulas. A major part of what makes MMOs what they are is giving people the tools to socialize and that means outside of combat content too. Theres nothing wrong with giving people good housing, good emotes and (formerly) good outfit freedom. A good RP scene is a sign of a healthy MMO.
