The world is made of a lot of little dudes, all living their own lives in their own way, so you could realistically believe that each new landmass mod is simply a look into someone else's adventures, which run parallel to your "main" one.
Unfortunately some plotlines assume you're the DB who's come over to solve every single problem around, but that can be fixed with creative headcanoning and selective deafness (especially recommended for that Gray Cowl mod)
Bonus points if you build the new character around the new region's speciality and folklore, using a whole slew of new complementary mods to make the character itself feel "fresh"

Does anybody know what causes interior cells to have sunlight applied to them by default?
Sunlight that comes from BELOW the map and it also white/cold regardless of time of day. I have seen this in buildings and various dungeons that are supposed to be pitch black.
I was thinking it comes from ENB but no it's the actual vanilla game sunlight effect as I have discovered via SAM.

I think water in general is usually controlled by the cell record if it's in the terrain/interior
like enb can control how much color water has but not which color; so, it probably would require a game restart

Before you read the rest: Have you run LOOT or checked your load order? If yes, continue.

This is a shot in the dark, but that looks like the wrong type of dds file is chosen for the texture in the CK.
If I had to keep guessing it would be that your wolf model is expecting a Backlight Mask and your texture set is giving him a specular map, or vice versa, or something similar.

Open CK and load the mod that's changing the wolf
Find the "Texture Set" for the wolf. Under the "Miscellaneous" tab.
Make sure the Map is getting the dds files it expects.

You probably have 3 maps in the Texture Set. A Diffuse, a Normal/Gloss, and a Backlight Mask(This may say "Specular". It's one or the other)
Diffuse = .dds
Normal/Gloss = _n.dds
Backlight Mask = _b.dds
Specular = _s.dds
If any of these are wrong it does that to the texture. You switch between Backlight Mask & Specular by ticking the "Has model space normal map" box on the Texture Set window.
I don't recommend you make any changes besides ticking & unticking that box. If this don't work I'm tapped out.

mounted combat for NPCs almost didn't suck but it's a huge difficulty step up, comparable to mihail's draugr riders literally everywhere
also if your horse doesn't come with a stock saddle that you like you need to edit its outfit record to contain more than one item so that its single saddle being replaced won't then be respawned when going through a long load screen like other actors do (but have less trouble due to 2-4 slots of items being filled if you swap one out)

It's actually a heavily modified Path of the Incarnate modlist with a few additional tweaks from like, like the addition of Arvesa, Shipyards of Vvardenfel, Seat of Power of House Telvanni and whatnot. Path of the Incarnate is actually very similar to the MWSE mod setup I've been using for a while until my PC died.
Eventually I decided to switch from MWSE for OpenMW for (much) greater stabilty and concluded that I can't be bothered to set up a whole new modlist by hand, when there is a very similar modlist on the internet doing the same thing that's just ready to download.

I stupidly used the "saveini" command, which had created a new .ini called "Occlusion.ini" in MO2's overwrite folder. I have a feeling the name is irrelevant. I just deleted it and everything is fixed.

even civil war battles with dozens of dudes don't really care about loaded assets because the point at which it becomes a problem is the same as the actors themselves being too taxing, unless you have a cursed hairstyle on one of them that would eat your CPU either way
