After playing Sky remake I have to say this game really sucks when compared to the original. I guess it might be good for young people who won't play an "old game", but for old fans mostly a disappointment...

Battle system is just shit, the old one, turn based is way better. The new voices are crap, all of the seiyuu are noname, cheap alternative, while the EVO ver had pro seiyuu and much better acting. Most of the 2d cutscenes are masterpieces in the original, while the new one is mostly generic 3d without anything outstanding. I find the art is better in the original / EVO games too. Not to speak about game balance, difficulty, enemy ai, etc.... new one is totally disappointing. Also it is made too easy for casual players, like showing all quests, maps, etc all time without any difficulty or thinking. Hidden stuff is nonexistent now. Quick travel makes traveling experience worse too.

For daybreak 1 and daybreak 2 if you play with jp voice I recommend putting the fan translation for daybreak 1 since NISA changes the script quite a bit for daybreak 1. It's not quite as OP, but it's still OP and absolutely carries the party in a NG Nightmare run.
The main practical differences are:

I did the two big doggos on my first try on Nightmare. Chaos Brand completely shut them down and was the key to the fight with me. There was nothing complicated about that fight. Just keep them Chaos Branded and attack them when not Chaos Branding them. That's it.
I don't really remember what I did other than CB for sure, but I was probably casting Saint on Joshua with Estelle and getting most of my damage via arts out of Joshua, because I give Joshua all of my ATS droplets.
I think giving Joshua all the ATS droplets makes sense because he's always in your party and he's such a fast caster with his SPD stat. Put an Impede quarts on him and his arts delay enemies - combine that with his fast casting and he just overwhelms enemies.

Personally, my issue with Rean is that he feels like he's a secondary character who's inadequatelly thrust into the mc role. He doesn't have an intriguing personality nor does he has a plotdriving goal wich are fine if you're not the focus of the story but become a issue when you are. As a result, you get a protagonist who's constantly needs the characters and the setting to do the heavylifting and giving him both the charisma (all the moments where the characters list all the great things about him) and the agency (him being part of a prophecy/chosen pilot of an advanced machine) beffiting of a main role.
