Start anywhere that looks appealing to you. A remake of the first game came out last year and its really good. The PS1 version of 1-3 has automap and great monster art and soundtracks. Don't play 4. There's an SNES version of 5 thats good but you'll probably have to make your own map. There's so many versions of 6 that I dont recommend the original at all, play the SNES version or the Saturn version or the PC engine version.

7 is great but one of the hardest to play. There's a ps1 port but its awful. Just buy the steam version and run it in the dos emulator. You'll have to make your own maps.

Wizardry 8 is solid as is from steam. You won't have to make maps

You can change classes in Wizardry and your characters keep their precious HP total and known spells. Thats about the gist of it. Its a linear dungeon crawl but it's a labyrinth filled with traps, puzzles, hidden doors and dark rooms so it doesnt feel like a linear slog. Wizardry 7 and 8 are very open to exploration though and are non linear
