What I'm reading is that Mettaton was yearning for a body but couldn't find one that let him feel like "himself", and then he must have vented his frustration to Alphys after he met her. By the end of it Mettaton is far more eager to see the body finished than Alphys is. (That body being the EX body, he doesn't fuse with the box body.)
Alphys's plans (impressing Asgore, impressing Frisk) only required the box body so AFAICT the EX body is purely a favor to Mettaton.

You have to understand that like 99% of the time it's not about what the characters are and is about people not wanting to interact with something so confusing and alien as characters (or, God forbid, even people) being neither nether men nor women (or trans, any other queerness).

That's an intriguing idea, but it seems like the knife is just a standard kitchen knife than like, an actual kris or an otherwise cool knife. I suppose Carol could have still gifted the Dreemurs with a kitchen knife set and it would still apply, if only somewhat. The headcanon would help explain why Kris seems so weirdly attached to their knife and Toriel would excuse Kris carrying it around everywhere. It would also imply that despite their current animosity with each other, Toriel is willing for Kris to carry around the memento because of its history and its connection with Carol.
I also believe they might see each other as perhaps substitutes for their families in a way. Maybe more Carol than Kris in this aspect. Kris has some similarities with Dess, which Noelle would indirectly note in her conversations, which is especially poigent since the conspiracy like revolves or at least heavily involves Dess in some way. Rudy also isn't around too, so Carol might see Kris as a kind of replacement for both Dess and Rudy, meaning Kris would be seen as both almost a near equal adult and perhaps what Dess would have been like if she was still around. I think Carol struggles to connect with Noelle, so she might feel it's easier to relate with Kris given the circumstances. 1/2

With Kris, it's lesser or maybe just more subtle. A future chapter might hint or elaborate upon it. Kris seems to be very close with their brother and I think that without Asriel around, it probably left a hole, which is multiped with the loss of Dess and how they became distant from Noelle. It's implied they've became rather seclusive and NPCs would usually react surprised if Kris comes up to them to talk. On the surface, Kris's relationship with Toriel seems fine, but on further inspection, I think you can notice a few cracks. You can argue that despite Toriel being generally motherly, she does seem to be unaware of Kris or maybe indolent of their situation, and yet seems to baby them to an extent, to which I think Kris resents. You can say this is perhaps an inverse of Carol and Noelle's situation. Note how Toriel doesn't really seem to be aware that grabbing a teenager's hand to school is probably embarrassing or try something with isolated they've became. The scene where she's drunkenly dancing with Sans is probably the biggest instance of this, because Kris went through something heavy just moments before and likely looking they did, Toriel doesn't pay attention to Kris much. I think people overplay this scene as Toriel being a terrible mother, but I do think it's indicative of some underlying issues. Perhaps Kris likes the fact Carol pays attention to them and treats them like an equal.

When it comes to Asgore, he kinda has a reverse issue. He pays attention to Kris in the wrong ways and Kris seems to get tangled in his sad attempts at reconciliation with Toriel. Kris hates how he hugs them and is he is just frankly really embarrassing. Like imagine if you saw your dad made the "Eggs-husband" joke? Fuck. When you compare that to how cold Carol seems to be, maybe it's preferrable, especially since Kris seems not necessarily cold, but does seem to be pretty distant personality wise, so Carol is probably similar to them in that aspect.
