From what I saw they basically cut a ton of spells and homogenized everything. Every class has combo points now with a different name, I saw every melee class has a clone of retaliation, except warriors amusingly enough who get a cucked version of it. every class has a charge, interrupt, slow etc. every class is the same with different color spell effects.

Being a half ass token dps spec is a laughable, superficial attempt at differentiating disc from holy. It's likely caused by the fact that the wow audience are primarily zoomers at this point who don't know anything other than retail slop, 2019 classic was their only exposure to non-retail but they were only interested in that because their favorite streamers were hyping it. By the time that classic tbc and wotlk came around the streamers had long since moved on to any new fotm so they think it's either retail or pure vanilla.

The really baffling thing is when they add 5x gold and reputations and professions and shit. You can at least make an argument for faster xp rates, but all of those other things actually have effects on the max level gameplay.

On warmane they do a gold wipeout every year, they delete 50% of every player's gold because that's the only solution their alcohol addled slav minds can come up with to combat gold inflation. It has massive negative effects on the game economy, prices of everything go insanely high in the last few months of the year and people hoard valuable trade goods since they don't get deleted leading to even more disparity between richfags and noobs. And this happens only because they have 3x gold or whatever, and their only justification for having 3x gold is so people can train their skills more easily while leveling with 7x xp rates.

What if for wotlk+ you had only Northrend? Like every character starts at level 68 in either borean tundra or howling fjord. There really isn't anything relevant to wotlk content in EK/Kalimdor or outland, and starting at 68 means you don't need a 8x xp modifier to make leveling bearable. You would just need to add some AHs and trainers somewhere, maybe even go the extra mile and convert the faction encampments in borean tundra and howling fjord into full cities.

No. Quests are subpar when it comes to grinding in terms of leveling. You just waste so much time running around. Early on quests are the way to go but I'd say by 20 they just aren't worth the time. You can just park in a spot and level way faster, especially if you have a repair bot to vendor.

There's also other systems but I'll admit, islands, torghast, delves are very much not things I'd play for the content itself, they want so badly to make someone single player/small group content in wow but haven't really settled on anything delves shit, the boss fight seasonal for them was interesting but I cannot say I've really liked doing them more than once.
I get why people wouldn't want to play retail and I'm not saying people should sub, just that I'm kinda tired of vanilla and wotlk and the price isn't too crazy for me.
I hope tauri legion turns out well and turtle isn't kill because the only interesting about older expacs to me is custom content.

Out of what you mentioned only raiding is worth checking on retail. Delves get old very quickly, pvp is a meme, and I hate how classes and even dungeons must all be designed around mythic+. Rest is bloat for tmogs mounts and cheevos crowd, which somehow seems to be huge on retail. Last two times I subbed I didn't even play for the whole month.
