You're worrying too much. Just pick a weapon that you think looks cool and go with it. As you level up you will unlock perks that will make leveling next characters faster/easier. At some point you will want to make an alt or two for stuff like aoe farming or maybe even crafting.

Resetting stats/skills is possible with cash shop, and the devs sometimes give full reset for free too. Just hop in and have fun.

This NPC has repeatable quests, one is for skins. Wings are used in crafting low lvl armors, people make tons of them, hoping they make one with a slot or two. Mino skins are for repeatable quest, 3 skins = exp +1 anti degradation potion. Potion is used in refining.

There are some skills that are worth dipping in, like in katana skills thete is Shukuchi, that for 5+1 skill points lets you dash to enemy gor free if it's very far, or Assassin skill tree with Backstep. I think Katana also had a pasdive for 2h weapons.

1h sword is good all around weapon, you can even dual wield them. Shield skill tree has some fun stuff too, like shield cannon.
