But the lower one was around 10-11 stars I think.(non SC. Stars in non SC and SC difficulties are absolutely not comparable)

Heh, yeah, the game is noticeably easier with all the extra perks and stuff you get. If you guys plan on playing more than once, it's not a bad idea to have your first playthrough be easy so you can fuck around as much as you want before taking it seriously the second time around. I'm doing my own playthrough and I'm around the same place you guys are, though I wiped several times already because I'm getting fucked by things I didn't know I could get fucked by. Fucking squirrel actually screwed me over once. Speaking of which,

Depends on how much you play. If you spend an hour or two a week you'll be ready.
You don't have to memorize big combos just get a grasp of the basics and find a character you enjoy and that suits you.
/doko/ isn't that strong and it's still fun even if you lose more than you win if you just view it as a lesson on how the game works.

a few are stronger but if they're off their characters you can still beat them.
other advice, the way you will lose as a beginner vs real people is that they will force you into a corner then constantly chip you down with low/high attacks since you need to be standing/crouching to block them. on your first few matches, try to figure out how to deal with this (it's not that hard), and you'll be fine vs most players.
