From my memory it's just mostly not extensively tagging the female characters. I know there's character tags, and some physical description ones, but I think the lack of focus on them mostly just manifested in not tagging OCs.
Iirc there was some debate over how to handle tagging in a variety of ways, and I imagine some are tagged anyways, especially if any images were just scooped with their tags from elsewhere.
The point was always more the monsters and relative aspects to them; iirc the size tags all relate to the size of the monster relative to the girl, for example. But it was never really coordinated that strongly.
But then it's been some time since I've really hung around the creation of it or uploaded or tagged anything myself. It could have gone any other direction imaginable by now.

I think that's always the best part of things like this, being exposed to pokemon, scenarios, and contexts we haven't really thought of before.
Even if it ends up not being our thing, or just something among things we like more, just seeing the appeal and understanding a new perspective, line of attraction, or way to enjoy things is really mind expanding. I can't handle bugs, but, I've seen the appeal for Drapion, for example. I "get" why someone would like it, and what I can see in it, even if the reality of a big bug is impossible to me.
For me at least, there was a really nice moment I remember, where I realized there's no hypothetical team of 6 that's the best for this, there's no perfect scenario. I dunno, it's probably just autism or something, but, that shift of perception from ideals to just enjoying things was really cool.

For me, it's kind of a shift in the way I look at them, I think.
Mewtwo is a really good example for me.
Mewtwo, for whatever reason, I see as a person, not an animal or monster like a lot the others. My interest in Mewtwo is also completely, completely different from basically any other pokemon. My interest in Mewtwo is pretty specifically tied to the personality of the one from the movie, and if it's not that one, I have a hard time seeing it as... some guy I don't know. Maybe they're cool, maybe they're not, in their own right, but, that's a very, very important feature of them.
Harsh contrast to something like Gastrodon, where, while I'm sure an individual has personality quirks I'd like or find endearing, or maybe not compared to others, that's kinda... irrelevant? Like, any Gastrodon would work. I'm sure I'd develop a personal attachment to one, but as long as it wasn't like, hostile or something, that's more a side note to my attraction to it physically.
I FEEL like that could happen with some of the more humanoid pokemon for me. I feel a little bit of this for Hypno, where my interest in it is primarily from scenarios where the Hypno is more or less an innocent bystander to its reputation. Hypno is a little messy because some aspects of hypnosis DO sound fun, but, that's a case where it's at least 50/50.
Mewtwo's just one who the example exists of me crushing on it a bit, because of the personality and character of one, kinda independent of the design. Nice hips aside, there's not really an aspect of Mewtwo that really stands out as something I like, it's all who it is. Hard to say for sure, but I FEEL like I could be swung around on like, a Machoke or something if I had similar personality based attraction to it.

I definitely prefer males overall though, and most of them I like as females, I'd like as much, if not more as males. Nidoqueen and Kanga are probably the only ones I'd prefer as females, even if they weren't locked to it, that aren't tentacle/vine platforms. Something about the body shape I guess.

Hard to say.
It usually takes me a bit to really get comfortable with new pokemon, so, my opinions could swing pretty drastically eventually. I'm not really won over by most gen 9 pokemon yet that aren't squarely in my zone.
That said... I don't see it. I have a bit of difficulty parsing what Espartha even is. I know it's like, an ostrich/emu, but, it evolves from a... thing, and its design is a little... I dunno, "pool toy-ish"? I say that but, y'know, am fine with Dragonite and love Goodra, but, it's a little different. I'm not opposed to birds, but I usually want a little more out of them than just, y'know, a bird. Blaziken is a good bird. Pidgeot... less so, and this is simultaneously too close to the pidgeot side of the bird question, while also being a little goofy looking. Again, my opinions could sway drastically.
As a platform for hypnosis, sure, I guess ot could fill the role, but it's pretty much ONLY for that, and doesn't really have anything outside that application. At that point, alternative avenues for mind alteration is probably more what I'm looking for.
It could just be I need to see more of it in action though.

I don't see that really done with Hypno for guys (or much female Hypno stuff at all, total shame, female Hypno is pretty cute and is SOLID as just support hypnosis for other scenarios, or in her own right. Seriously underrated, give it a shot sometime if you never have). Sexuality play in general is pretty niche stuff, especially since it hits just the right buttons to piss some people right the fuck off, but I think it's fucking delicious. A crab is not a slug, a horse is not a dog, and I have no idea how to expand this outwards, so sticking to just these, I have no idea if a dragon or a ferret or whatever is an animal or a weird animal. I'm broadly assuming "Giant biped" encompasses nore monstrous bodyplans like Aggron, Dragonite, or Tyranitar. And I have no idea exactly what does or doesn't fall into these categories, I'm eyeballing these, there's outliers, positive and negative, for every category. Besides tentacles and snakes, which ARE kinda interchangeable, a lot of these really aren't. Even subtypes of animals, like dogs, rodents, or horses can have a pretty wide spread
