The Raizing shmups Armed Police Batrider and Dimahoo. About twenty playable ships in the former, including some from Garegga.

Is the music as badass as Fighting Layer?

The Dudley looking guy looks like a serious motherfucker in the video, that BGM too!

Anyway, my recommendation is Ninja Baseball Batman, seriously underrated beat em up!

Quiz Kodotate trilogy is great, mixes sim raising with quiz, lot of replayability due to different outcomes

Toy Fighter too,the spiritual sequel toFifhter Destiny 1/2 on N64, loves those games back when I was a wee lad and we had the N64 at cousin's!

This game is still hilariously cool to me

The Guilty Gear X Ver. 1.5 in an arcade only oddity, it is GGXPlus with retooled moveset and game system to play closer to the then upcoming XX #Reload.

Druaga Online is an interesting Arcade RPG game too, worthy a check.

Dead Or Alive ++ is PS1 Doa for arcade but with the same system from DOA2 onwards, has exclusive costumes and unique ost.

It's a pretty long-running series in Japan that comes back every once in a while. Druaga Online was basically Gauntlet Legends with more RPG elements and online multiplayer.
