Nightly every single time. Stable builds are always years out of date I don't understand why theyre even offered, regressions barely ever happen at least not impactful ones.

Stable builds really do need to be hidden away somewhere. Too many uninformed normies just see the word "stable" and assume thats the one they should get and then wonder why they're games don't work/have graphical issues and poor performance.

"Stable" does _NOT_ mean that dosn't crash or is feature filled, in the world of software "stable" means _unchanging_. You can expect a specific functionality, even if it means you can expect a cretin bug.
Stable branches absolutely have their place, but is not always the best choice depending on what you're doing.

never ever use the "stable" build of any emulator ever, the nightly is always the one to get. In fact I think "stable" builds of emulators are there to filter retards and make them cry about games not working right

I never knew this. I always see software releases in tiers like

>alpha
>nightly
and always thought updates just steadily trickled their way back through and the closer you get to stable the more proven/tested the update is, leaving stable as the most robust and, well, STABLE build as opposed to beta or nightly builds that could be a lot more prone to crashing or bugging out because they're being tested still.

To me, "nightly" always sounded like a build only developers who want to be on the bleeding edge testing brand new unknown shit should download, while "stable" always sounded like the build intended for public use by anyone.

Sometimes they do, sometimes they don't. All depends on how said project is ran.
PCSX2 is a bit notorious in particular in going multiple years between stable releases. Where MAME on the other hand has a stable release every 5-6 weeks.
Just got to do a bit of research on a case by case.
