I'd play a full fledged side scrolling beat em up with Tekken mechanics and more diverse enemy types. In T4 they made it more 3D which I don't like.

Not even the main game but it runs at 60 fps, pretty highly detailed backgrounds, the ground is a bit warped but no big deal, silky smooth animations and nice lighting.
This is exactly the type of thing I mean when I say N64 is missing something.

I got a chicken (as in I escaped a counter and the announcer said "chicken!") during a Tekken Tag money match as a kid and it remains a treasured memory. The guy got the counter and reached to get a sip of his drink during the animation and I escaped it and he had to scramble to put the drink down to grab the controls again.
