The eggplants go away when you have 2 bars left, so in some cases you can still make the best of it. In this case you can't really do anything. The thing is in this case there is about a 75% chance that that last egg spawns an item that entirely refills your bar (so you're supposed to wait till the eggplant leaves and then pick up the item) but there is also about 25% chance it spawns a ring instead which is a death sentence. It's troll design really, see the next video and I get the M item instead in the same place.
You can also try not to activate the eggplant in the first place but to do that it's a really really tough jump
