G/S/C and I'm not apologetic about it.
Pros:
The art style is great better then RBY in my humble opinion.
250 pokemon (including my boys Cyndaquil, Gligar and Steelix)
Actually have a chance at catching them all,
Night and Day cycle meaning when it's dark outside it's dark in the pokemon world too,
Johto is a legitimately awesome region, well thought out and leans hard into Shinto and Buddhist themes,
16 Gyms,
The whole (well mostly) of Kanto to explore as "post game"
And that fight with Red is aces.

Cons:
Kinda the start of the meme-legendaries (2 box legendaries, 3 dogs, 3 birds, potential for mew and mew-two, and potential for Celebi),
16 Gyms, at least 12 of them are easy mode (L40 and below),
Elite Four are okay but Lance is awful,
Not really seeing all of Kanto due to size limits, still better for being there than absent.

It was unironically really fun. I remember discovering this on emulation in the mid 2000's and being absolutely surprised at how good it was. Back then no one was talking about it, I just randomly found it while scrolling through a huge list of ROMs I had pirated. I got hooked and played through from start to finish. The only Gameboy game I have ever finished apart from Pokemon Red and Legend of the River King

LeafGreen was the first time I was disappointed with a GB release. If I wanted to play gen1 again I would just play gen1.

I like every other pokemon game on GB to play them again and again.

It's objectively not the best but I'm biased towards FRLG. Something about the color palette and the abandoned state the region is in make it feel really quiet and atmospheric to me. Over the years it has become my favorite.

Red, followed by Gold. All other answers are wrong. Blue's color palette is too blue. Yellow has ugly soulless sprites. Silver has shit sprites although Lugia having aeroblast is cool. Crystal has dumb pokemon animations when entering battle and neither legendary bird get their signature moves. Gold has the best sprites. Red has best color palette. Gen3 is mediocre so I won't address it.

As a kid I would have said Silver or Gold (whichever your friends didn't have) as an adult, Crystal.
I don't mind Crystal Clear these days but it's definitely a departure from vanilla, and there's bound to be other romhacks that deliver on the ability to catch them all without the other changes Clear makes.

but you wont encounter a huge amount of them because they are either low percentage encounters or locked behind doing everything else
also gen 2 was the first gen where completing the deck was completely turned to shit (unless you count yellow were you needed trades from both other versions lol)
friendship evolutions are a huge grind if you want to do it and all you can really do is grind the elite 4 dozens and dozens of times for exp
getting the baby pokemon requires tons of box manipulation which sucks not to mention the grind of actually getting the egg to spawn and then hatching it
requires both the fossile pokemon from gen 1 so minimum 1.5 playthroughs required of that on top of the 2 for gen 2

sure you could say that you arent meant to complete the dex but i always found it unsatisfying as a kid knowing i would never be able to complete it unless i bought another gameboy and multiple other games to trade with myself

true but the starters are pretty easy to get because you can trade quite early and the legendaries are fair because you can get them all in one playthrough
the it takes several hours to get to the part where you get the fossile pokemon and ofc thats several hours of braindead mash a combat which you will already have been doing for like 50 hours at that point

At this point, you could easily make your own hack of Crystal or any of the Gen1-3 Pokemon games. The disassemblies are all on github and have ample instructions for basic editing of tables.

I said you'd have a chance at catching them all, I personally don't care to, but each time I play I try and make sure that I have a different party. My most recent was something like Ninetails, Blastoise, Tyranitar, Bellossom, Hitmonlee, and Hypno, and like a total dex size of about 60 caught.
One of my mates it is super important to be able to "catch em all", but not really me.

thats cool and probably the best way to play i just think its sucks that they couldnt manage to make the experience of catching them all fun (especially considering the combat is so shallow unless you severely limit yourself so it would be much better with a bigger focus on hunting and catching mons)

For retro, I'd say Emerald. Overall, I think Platinum and B2W2 outclass it in certain areas like balancing but Emerald still has the best endgame content with its Battle Frontier thought and is still my favorite game to replay.

GSC is pretty fucking bad and carried entirely by nostalgia.
The distribution of Pokemon is horrible, the level curve shits itself after the third gym, most of the fights in the game are extremely underwhelming with most gyms and Elite 4 not even using Pokemon introduced in Gen 2, Johto itself is by far the most boring region of the first 5 gens with most routes being small and just grass, Kanto amounts to nothing more than a boring boss rush because half the region was gutted and the wild life encounters have their levels in the teens making them borderline useless, etc. Gen 2 is complete dogshit.

Yes that's the point of the game, not every pokemon is supposed an OU machine, some are rare pokemon for you to find and work to make the game more difficult if you want to use them.

I froth gen 2, but I do think the level curve is a bit lacklustre, but when I say that I mean that Morty, Chuck, and Price can be done in any order, meaning they all have middling pokemon levels. It's the trade off for a more open experience, and a worthwhile one for me anyway.
Then there's a few other things like Jasmine's Steelix using Sunny Day and having zero follow up with it, it's just a little easy.
