Ultima Online from 1997 until 2000 or so when OSI fucked everything up with Trammel. But U4-U7+SI are all classics, as are both of the Underworld games.

Ultima Underworld for sure. It's still an unsurpassed dungeon crawl. If restricted to the main series, then Ultima V was the peak.
